Fun + Fast Porsche Borscht

A couple of days after we ate this borscht, we were stopped at a red light and Jake asked what kind of cool (red of course) car was in front of us. “It’s called a Porsche,” I replied. “No, mom, that’s the kind of soup we ate this week!” Silly me. Both red. Both quick (one on the road, one to get into all the tums). So here’s the Porsche Borscht.

It’s FUN (=mom loads in tons of veg and the kids don’t know!) + FAST (everyone gobbles it down in record time)!

Not your average (or traditional) borscht

and don’t skip the butter

A wise, wise friend once gave me the tip to saut√© the veggies in butter at the beginning, so that’s exactly what I did. And it’s magical, so for sure don’t skip that.

Also, I see a lot of recipes mentioning that they’re “traditional” and I have no idea what makes a borscht recipe traditional. This recipe was 100% made up, so probably does not fit that criteria BUT don’t let that stop you as you’ll seriously be missing out. Jeremy is not usually a borscht fan and he called this DELICIOUS, and even willingly took some leftovers for lunch. Take that “traditional borscht.”

Porsche Borscht

A delicious Borscht that will be sure to please even the non-borscht lovers!


  • 1/2 cups butter (trust me)
  • 3 medium beets, grated
  • 4 medium potatoes (I used yellow), cubed small
  • 4 carrots, grated
  • 1 zucchini, grated
  • 1.5 cups red cabbage, chopped small
  • 1 onion, chopped small
  • 4 cloves garlic, minced
  • 4 cups broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon coconut sugar
  • 1 teaspoon sea salt
  • 1/4 cup tomato sauce


  • Prepare your veggies.
  • Turn Instant Pot on Saute.
  • Add butter and all your veggies.
  • Saute for 5-10 minutes, stirring often. Turn off.
  • Add remaining ingredients.
  • Cook on high pressure for 10 minutes. Allow to naturally release for at least 5 minutes.
  • Ladle out 3 cups into your blender to puree, then pour back into the pot. Add some salt, pepper and some dill to taste and it's ready to eat!

Right now, as the world hides inside as COVID-19 makes it’s rounds, a lot of families are trying to limit their time at the grocery store and visiting every 2-3 weeks. Borscht is a fantastic meal to save to your second or third week between grocery shopping. The ingredients keep in the pantry or fridge very well, and so even when other produce would be long gone and gone bad, these beauties will be ready and waiting for you.
